Ingredients:

Instructions:
Step 1: Blend the bell peppers, tomatoes, onions, and scotch bonnet peppers. Transfer the mixture to a pan and cook until the water reduces.
Step 2: In a separate pan, heat vegetable oil for about 40 seconds. Add the onions and fry until fragrant. Then, stir in the tomato paste and cook for about 20 minutes.
Step 3: Add the cooked pepper mixture to the pan and fry for an additional 8 to 10 minutes.
Step 4: Season with chicken cubes, thyme, curry powder, garlic powder, and bay leaves. Pour in the chicken stock and water.
Step 5: Add the washed rice, mix well. Add just enough water to cover the rice by about 1 inch.
Step 6: Cover the pot with aluminum foil and cook on low heat for about 25 minutes. Step 7: Stir the rice gently and serve.
